Downeast Blueberry Pie Use your favorite recipe for a two crust, 9-inch pie. Preheat oven to 375. Place a baking sheet on the bottom of oven and position rack in the center. 4 cups fresh blueberries Combine the above items with a couple of gentle stirs and let stand for 15 minutes. Put the first layer of pastry in place in the pie pan. Pour filling in and prepare the top pastry. Fold over and crimp the edge. Cut several slits in the top crust. Bake about an hour -- juices will bubble thickly and crust to a golden brown. |
Apple-Cranberry Maple Side Dish Select is a microwaveable two cup size dish. Dice two medium apples, add 1/2 cup of fresh cranberries and 1/4 cup of Pure Maine Maple Syrup. Cover dish with plastic or other top. Cook at MEDIUM for 8 to 10 minutes. |

Maine Maple Pudding (Cake) 1-1/2 cups flour Preheat oven to 350. Mix above ingredients and spread in greased baking pan or dish. 3/4 cup of water Combine these three in a saucepan and heat until the butter is melted. Pour heated liquid over batter and bake about 45 minutes -- until cake is lightly browned. Cool briefly. Serve with whipped cream. |
| BBQ Franks: For each pound of franks mix 1/2 cup Pure Maine Maple Syrup, 1/4 cup catsup, 1/4 cup prepared mustard, and 1 tbsp cider vinegar. Put franks in frying pan and add one coarsely chopped large onion. Saute lightly. Add maple mixture and cover pan and simmer for ten to fifteen minutes. |

| Broiled Scallops: 2 lbs of scallops (or other fish,) 1/4 cup Pure Maine Maple Syrup. 1/4 cup prepared mustard, and 1 tsp. fresh lemon juice. Place scallops in shallow baking dish and brush with maple sauce. Broil 5 minutes. Turn scallops and brush with remaining sauce and broil another 5 minutes. |
